Spring has been thrown onto the back burner here on the east end of Long Island. It’s drizzly and snowy, and it looks like January outside. Last night, after building a roaring fire in the living room fireplace, digesting the miserable state of the world on network news, and imbibing a cocktail to wash down Libyan war and Japanese meltdown, I glumly headed to the kitchen to make dinner. Needless to say, I wasn’t in the mood to orchestrate some 2Gourmaniac culinary magic. I poked and prodded in the refrigerators and freezers and, lo and behold, I found a couple of cod cake “logs” tucked away in a freezer.
I took them out and ran them in the microwave for 45 seconds to thaw them just enough to be able to cut them into “cakes” or patties. I coated them with some Wondra and quickly sautéed them in olive oil. While they were cooking, I heated up some leftover asparagus pesto sauce and quickly steamed some green beans that I found in the refrigerator.
The whole meal came together in less than 10 minutes. In another 15 minutes, my stomach was full, and my outlook much improved.
