Breakfast Quesadillas with egg crepe, cheese and mushrooms
If you’re not a big fan of cereal or anything sweet for breakfast, the alternatives can be limited. That’s why I often find myself inventing something new and different to have in the morning – when I do have breakfast (I know, I know!). However, it has to be healthy, fresh, and effortless. Recently, I had made 6” egg crepes to serve with my Hot & Sour Soup recipe. That’s a good breakfast item, I thought. Then I noticed a bag of 6” flour tortillas and a package of 6” provolone cheese slices in the fridge, and a breakfast plan began to form, around size and shape. The flour tortillas would contain low-fat provolone cheese, egg crepes, and other goodies on hand. Cut into wedges and served with sliced oranges, or your favorite fruit, these small quesadillas can be just the right perk for your savory breakfast.
Ingredients:
4 6” flour tortillas
2 6” provolone slices
2 6” egg crepes
6-8 small button mushrooms, sliced
¼ cup shredded Mexican cheeses
¼ cup chopped cilantro (or parsley)
3 Tbsp vegetable oil
Chopped chilis or jalapeño to taste
Chipotle chili powder
Salt & pepper to taste
- Beat an egg in a small bowl until frothy and sprinkle with chipotle chili powder, salt & pepper, blending well. Heat the vegetable oil in a 6” inch nonstick skillet over medium-low heat. Pour in the beaten egg to make a thin crepe, flip it over for about 30 seconds, turn off heat, and transfer to a plate by sliding the crepe out of the skillet. Repeat with second egg. Set both crepes aside.
Sauté the sliced mushrooms in 1 Tbsp vegetable oil until soft and golden. Set aside.- Place a flour tortilla in the 6” skillet, alternating the toppings: provolone, mushrooms, chilis, shredded cheese, cilantro, and egg crepe. Top with another flour tortilla. Heat gently for 30 seconds per side to brown the tortillas. Transfer to a plate and repeat with the second quesadilla.
- Place the quesadillas in the microwave for 30-45 seconds, to finish melting the cheese and soften a bit. Transfer to a cutting board, cut into 4 wedges, and enjoy!
