Pepper, onions, eggs and herbs breakfast wraps

What’s for breakfast? If we don’t skip it altogether (I know, I know, bad idea) we try to be creative about preparing breakfast and very often incorporate vegetables and / or fruit for a healthy jump start on the day. This morning was no exception and within minutes we had a satisfying and scrumptious breakfast for two, as follows. 

Ingredients

1 orange pepper (or any color), seeded, sliced thin and cut into shorter pieces
1 jalapeño, seeded and finely chopped
1 small onion, sliced thin
2 eggs (preferably organic)
2-3  8″ flour tortillas or any wraps of your choice
¼ cup chopped cilantro (or parsley)
¼ cup chopped mint
2-3 Tbsp olive oil  
a sprinkling of shredded cheese of your choice
salt & pepper to taste

Preparation

Heat the olive oil in a small non-stick pan and add the chopped pepper. Stir for a few minutes, add jalapeño and onion, and continue stirring. When all vegetables are translucent, break the two eggs over the mixture and mix well to scramble eggs and vegetables together, and season to taste with salt & pepper. Mix in chopped herbs and cheese, stirring again, and turn off the burner. Meanwhile, heat the 8″ wraps in a microwave for 15-30 seconds, to soften. Divide the vegetable-egg mixture evenly between the wraps, rolling and sealing each one securely. Cut each roll in half, plate and serve.
