Chilled Light & Spicy Tomato Soup

Where have we been lately?  Everywhere!  Busy summer so far, what with entertaining, visiting friends and family, cheffing, and trying to “chill” in this infernal heat … Speaking of which, here is the easiest soup ever: chilled tomato soup derived as a byproduct from the fresh garlicky tomatoes used on last night’s grilled pizza.  The tomatoes on the vine were chopped and cooked in a bit of olive oil with lots of minced garlic and a little salt.  The liquidy tomato broth that was strained out of the mixture, before arranging the tomatoes on the pizza, was perfect for a cold soup today – one of the hottest days in recent history.  After adding plenty of red pepper flakes, the garlicky tomato liquid was chilled to perfection overnight, poured into a bowl today and served for lunch with a mint garnish and a crusty baguette slice.  Light, cold, spicy, and wonderfully refreshing!  And although I have not tried it yet, I’m certain this heavenly liquid would make a perfect evening time pairing with your favorite vodka and lots of ice cubes.  Bon appetit … and cheers!
